Who doesn't like the taste of good ole' Key Lime Pie?  Well those people are crazy!  It's one of our family's favorite pies.  And until now, we could only get it when we go to restaurants that offer it as a dessert and we save enough room in our bellies to actually order dessert. 




 So now we have a recipe that is half the effort and twice the fun.  You could potentially eat the entire thing, and it's quite frankly hard to resist.  It's also enough to share with someone if you can part with it.  You could hide it in the back of the fridge if stolen bites are the problem around your house.  



Ingredients:

Pie Crust

4 S'more sized graham crackers (1/4 cup)

2 Tsp Coconut Oil

1/4 Tsp Cinnamon

Pinch of Salt

Pie Filling

2 oz Cream cheese (room temperature)

1/2 Tbsp Sugar

1/2 Lime - juiced

1/4 cup Sweetened Condensed Milk

1 1/2 Tbsp Dairy Free Coconutmilk Vanilla Yogurt

1-2 Drops Green Food Coloring

Instructions: 

1. Crush the graham crackers

2. Mix graham crackers, coconut oil, cinnamon, and salt.

3. Lightly press mixture into the bottom of the mug

4. Microwave at 50% for 30 seconds

5. In a separate bowl whip cream cheese, sugar, lime, sweetened condensed milk, and yogurt

6. Stir in 1-2 drops of food coloring

7. Add this mixture over the crust

8. Refrigerate for 1 hour

9. Add whip cream and lime slice for garnish (optional)

10. Enjoy!


Notes:

* Be sure the coconut oil is in liquid form.  If it is solid, pop it in the microwave for a few seconds until it returns to a liquid.

* Any Greek style yogurt should work for this recipe.  Coconut flavored would be tasty.  Just make sure it is not a competing flavor. For instance, I would not suggest a chocolate flavored yogurt.  


* Ice cream and/or caramel drizzle are great toppers with this dessert.

* Different food colors are different.  Start with 1-2 drops and then judge from there if you want a deeper color. In Jazmin's video, more than 2 drops came out and it was quite the bright green, but she loved it.

Ingredients:

Pie Crust

1 Tbsp Butter

8 Mini Oreo Cookies (or 4 regular sized cookies) Crushed

Pie Filling

1 Vanilla Snack Pack Pudding

1/3 Cup Whip Cream

8 Mini Oreo Cookies (or 4 regular sized cookies) Crushed

Instructions: 

1. Microwave butter in the mug for 15 seconds or until melted

2. Add crushed Oreos to the butter and mix until all cookies are moistened

3. Lightly push Oreos into the bottom of the mug

4. Microwave for 30 seconds

5. In a separate bowl, mix pudding, whip cream, and crushed cookies. Reserve some cookies to sprinkle on top

6. Add this mixture on top of the Oreo crust

7. Sprinkle with reserved Oreos

8. Cover and refrigerate for 1 hour

9. Enjoy!

Apple Crumble Pie


 

Ingredients:

Pie Filling

3/4 Granny Smith Apple

1 Tsp lemon juice

1 Tbsp Brown Sugar

1/2 Tbsp Quick Oats

1/2 Tbs All Purpose Flour

1/4 Tsp Cinnamon

Crumble

1 Tbsp Butter

1 Tbsp Brown Sugar

3 Tbsp Quick Oats

1 Tbsp Flour

1/4 Tsp Cinnamon

Instructions: 

1. Cut apple into bite sized pieces.

2. Coat apple with lemon juice.

3. Mix apple with brown sugar, quick oats, flour, and cinnamon.

4. Add to mug

5. In a separate microwave safe bowl, microwave butter 15 seconds or until melted (microwave times will vary)

6. Add brown sugar, quick oats, flour, and cinnamon to the butter and mix until all ingredients are moist.

7. Add the crumble to the top of the apple mixture.

8. Microwave 60-90 seconds until everything is heated through.

9. Enjoy!


Notes:

* You can use the whole apple, but we found it was too much...but to each their own!!  No need to adjust any other ingredients if you decide to do this.


* Ice cream and/or caramel drizzle are great toppers with this dessert.

Girl Scout Cookie in a Mug






Ingredients:

2 TBSP Butter

1/4 Cup crushed Trefoil cookies - abou5 Trefoil Cookies - crushed

8 Thin mint cookes - crushed

1 Snack size chocolate pudding pack

Whip cream and 1 Thin Mint cookie for garnish - optional


Instructions: 

1. Melt butter in mug

2. Crush Trefoil cookies and add to butter. Mix until all cookies are moistened.  Gently press cookies into mug to form the crust.

3. Microwave on 50% power for 30 seconds.

4. Crush Thin Mint cookies.

5. Add a thin layer for Thin Mint cookies over the Trefoil crust.

6. Mix the chocolate pudding and Thin Mint cookies (reserving 2 TBSP) in a separate bowl. Pour pudding mixture over the crust.

7. Add the remaining Thin Mint cookies over the pudding mixture.

8. Add whip cream and a Thin Mint for garnish.

9. Enjoy!


Notes:

* You can eat it right away for immediate gratification or put it in the fridge for one hour to firm it up so it is more "pie like".

Red Velvet Cake in a Mug

Ingredients:

4 Tbsp All purpose flour

1/2 tbsp Cocoa powder

2 Tbsp Sugar

1/4 Tbsp Baking powder

Pinch of salt

3 Tbsp Milk

1 tsp White vinegar

1 1/2 tbsp Vegetable oil

3-5 drops red food coloring

2 Tbsp White chocolate chips divided

Confectionary sugar to sprinkle on top (optional)


Instructions:

1. Mix together the dry ingredients

2. Stir in the wet ingredients

3. Add in 3-5 drops of red food coloring

4. Stir in 1 Tbsp white chocolate chips

5. Sprinkle remainder 1 tbsp White chocolate chips on top of batter

6. Microwave for 1 minute and 15 seconds (we have a 1000 watt microwave)

7. Sprinkle with confectionary sugar and enjoy!


Notes:

1. The milk and vinegar is a replacement for buttermilk.  If you would rather use buttermilk then substitute the milk and vinegar for 3 tbsp buttermilk.

2. The amount of food coloring depends on what kind you use.  We used a gel which tends to be strong.

3. Swap out the white chocolate chips for peanut butter ones, or leave them out entirely.

4. Be sure not to over mix the batter as it makes the cake a bit tough.  The cake should be super fluffy!!

Banana Pudding in a Mug

Ingredients:

15-20 Crushed mini Nila Wafers & 15-20 whole mini Nila Wafers

1 banana

2 snack pack sized vanilla puddings

1-2 cups of whip cream 

2 tbsp chocolate chips


Instructions:

1. Place crushed mini Nila Wafers in the bottom of the mug

2. Slice banana and place half of them on top of the wafers

3. Spread one pudding cup over the bananas

4. Add a layer of whip cream

5. Sprinkle half of the chocolate chips on top.

6. Repeat layers but start with whole Nila wafers.

7. Refrigerate for 1 hour.


Notes:

1. This recipe can be done with all crushed Nila Wafers or all whole wafers.  The choice is yours (how often do you hear that?).

2. You really can't go wrong with this recipe, if you really like whip cream, then add more!  If you want more chocolate chips...then go for it!  This recipe is a starting point, you can experiment from there.

3. Swap out the chocolate chips for peanut butter ones, or white chocolate, or leave them out entirely.

4. You can eat this immediately, but putting it in the fridge for an hour firms it up and makes it a more pleasant eating experience.

Fudgie Brownie Mug Cake

Ingredients:

3 Tbsp All purpose flour

3 Tbsp Sugar

2 Tbsp Cocoa powder

Pinch of salt

2 Tbsp Water

2 Tbsp Vegetable Oil

1 Tbsp Chocolate Chips

Headings:

1. Mix together all dry ingredients

2. Add Water and vegetable oil

3. Stir in chocolate chips

4. Cook 1 minute and 10 seconds in the microwave.  If the top still looks wet then add extra 10 seconds until cooked.

Notes:

* Do not over mix this batter.  Stir just until incorporated. Over mixing can make the brownies hard.

* Do not over microwave this batter. The batter will continue to cook in the mug even after you remove it from the microwave.  Over cooking will cause the brownies to be tough. Since there are no eggs in this recipe, better to undercook than overcook.

* All Microwaves are different, therefore cooking times will vary.  I cooked mine in a 1200 watt microwave for 1 minute and 20 seconds.
