Strawberry Shortcake in a Mug

Ingredients:

5-7 Strawberries

4 1/2 tsp sugar (divided)

5 Tbsp All purpose flour

1/2 tsp Baking powder

Pinch of salt

1/4 tsp Vanilla

4 Tbsp milk

1 Tbsp Unsalted butter (melted)

Instructions: 

1. Cut up strawberries and put 1/2 tsp sugar on them in a separate bowl

2. Add dry ingredients to the mug and mix well (we like to use a chopstick)

3. Add the wet ingredients and mix until just incorporated. Don't overmix!

4. Microwave 1 minute and 15 seconds.  Check and add 10 seconds as necessary

5. Add strawberries to the top of the cake and top with whipped cream.  Garnish with a strawberry if you wish.
